Re: The Tolkien Translation Game!
Bilbo to Gandalf: "We are plain quiet folk and have no use for adventures. Nasty disturbing uncomfortable things! Make you late for dinner! I can't think what anybody sees in them."
Though how "Makes you late for dinner! I can't think what anyone sees in them" became "Shut up, shut up, shut up" I can't imagine.

"Spirits in the shape of hawks and eagles flew ever to and from his halls; and their eyes could see to the depths of the seas, and pierce the hidden caverns beneath the world."

I ran your answer through the translation party, and "Nasty disturbing uncomfortable things!" early on became "disturb unpleasant unpleasant!", and ended up as "No no no no no!"
Re: The Tolkien Translation Game!
V has it. Only the first two sentences. And in my case, “nasty, disturbing things” became “shut up, shut up, shut up”.

Not spoken by Bilbo, or any other hobbit.

If there was anything that depressed him more than his own cynicism, it was that quite often it still wasn't as cynical as real life.

Nope. It is from LOTR, though.

Is the phrase “old man” in the original?

No, it is translated from something similar, but different.
"Spirits in the shape of hawks and eagles flew ever to and from his halls; and their eyes could see to the depths of the seas, and pierce the hidden caverns beneath the world."

Re: The Tolkien Translation Game!
So not Gandalf calling Denethor not yet a “dotard”?

Not Gandalf and not Denethor.
